One half pound Chopped cucumbers; boiled
peeled potatoes or chopped
tomatoes
2 cup Yogurt
1/3 cup Onion
One fourth cup Grated coconut
Cumin & salt

Here's a particularly good cooling riata Heat the oil to low and add the
mustard seeds. Cover and cook 2 minutes while the seeds pop, then let it
cool. Mix the vegetables with the yogurt (mash in the potatoes, if you use
them). Add the oil, mustard, and coconut then season with salt and cumin to
taste. Chill for at least 2 hours and serve.
