Recipe - Double Apple Corn Muffins

1 cup AllPurpose Flour
1 cup Yellow Cornmeal
One fourth cup Sugar
1 Tbls Baking Powder
One half teaspoon Salt
2 Slightly Beaten Eggs
2/3 cup Applesauce
One half cup Milk
One fourth cup Oil
1 lg Apple, Peeled And Finely
Chopped
Stir together four, cornmeal, sugar, baking powder and salt and set aside.
Combine eggs, applesauce, milk and oil; stir into dry ingredients just
until moistened. Add apple. Spoon into greased muffin pans filling 2/3
full. Bake in 425F oven 15 to 20 minutes.
