Recipe - Dorothy Witchers Eggplant Casserole

1 Box favorite stovetop
Stuffing
1 Onion, chopped coarsely
2 Cloves minced garlic
1 pound Chopped eggplant, squash
Or whatever
25 cup Olive oil
5 pound Grated cheddar cheese

Prepare stuffing per directions. Saute onion and garlic in olive oil till
brown. Add other veggie and sauted till soft. In a casserole dish, combine
stuffing and vegetable mixture. Mix well. sprinkle top with cheese. Cook
at 350 until cheese is melted and bubbling.
