Recipe - Diet Cheesecake

15 ounce Skim milk ricotta
1 md Can crushed pineapple;
(reserve juice)
1 Egg
1 teaspoon Vanilla
6 pack Artificial sweetener
1 pn Salt
One half cup Pineapple juice; (from can
of pineapple)
1 teaspoon Lemon juice
1 pack Unflavored gelatin
From JEWISH WEEK May 1994
Mix first 6 ingredients. soften gelatin in pineapple juice and add to
mixture. Pour into 9inch pie plate and sprinkle cinnamon on top. Bake for
15 minutes at 350 degrees. Cool and chill.
