Recipe - Diabetic Rice Pudding

Ingredients:
Diabetic Rice Pudding recipe makes 6 Servings
One half cup White rice
One fourth cup Sugar
Three fourths cup Water
1 teaspoon Vanilla extract
2 cup Skim milk
One half cup Raisins
Cook the rice in water over medium heat until tender, about 45 minutes. Add
the skim milk & sugar. Cook slowly over low heat until thickened, about 30
minutes. Cook, add the vanilla & raisins and spoon into six serving dishes.
