Recipe - Dessert Chremslech

3 Eggs, separated
3 tablespoon Matzo meal
1 tablespoon Sugar
One half Lemon, rind, grated
5 tablespoon Nuts, groundmake each a
heaping tablespoon.
Apricot jam
Make a snow with whites. Gradually add sugar. At slow speed beat yolks into
whites. Slowly fold in dry ingredients. Fry tablespoon of mixture (to make
latkehs) in hot oil; place One half teaspoon jam onto each latkeh (almost in the
middle), fold latkeh in half, and fry both sides of the half moon. Sprinkle
with sugar if desired.
