Recipe - Delta Style Veggies

3 tablespoon Chicken stock or water
1 Green pepper; coarsley
chopped
1 md Sized onion; chopped
1 Clove garlic; minced
Three fourths cup Poultry stock or water
1 cup Sliced okra
2 cup Chopped peeled tomatoes
1 One half cup Lima beans
1 cup Corn
One half teaspoon Dried marjoram
One fourth teaspoon Crushed red pepper;
(optional)
1 tablespoon Cornstarch; dissolved in 1/4
cup water.
Heat the 3 T. broth in large skillet. Add green peppers, onions, and
garlic. Saute until soft. Stir in the cup stock or water, okra, tomatoes,
and lima beans. Simmer, covered until veggies are almost tender. About 20
minutes. Add corn and cook 5 minutes. Stir in marjoram, red pepper, and
cornstarch mixture. Cook, stirring constantly until thickened. Simmer for 1
minute longer. Serve warm!
