Recipe - Deep Fried Almond Chicken (Hang Yan Ja Gai Yuk)

1 1/3 cup Flour
1 teaspoon Salt
One fourth teaspoon Pepper
1 tablespoon Melted butter
2 Egg yolks
Three fourths cup Flat beer
2 Egg whites
3 tablespoon Ground almonds
2 tablespoon Sugar
2 pound Chicken breasts; thinly
cut or sliced up
Peanut oil for deep frying
1. Mix flour, salt, pepper, butter, egg yolks and beer in bowl. Refrigerate
for 4 hours.
2. Mix almonds and sugar in a bowl.
3. Just before cooking, beat egg whites until stiff, then fold into batter.
4. Heat oil to 350F. Dip chicken in batter and deep fry until golden brown.
5. Drain, slice crosswise and sprinkle with almond/sugar mixture.
6. Serve on bed of shredded lettuce.
