Recipe - Date Nut Loaf

1 cup Flour
1 cup Sugar
4 Eggs
2 teaspoon Baking powder
1 pn Salt
1 pound Dates, coarsely chopped
1 pound Pecans, shelled, coarsely
chopped
2 tablespoon Vanilla
Grease a 9inch loaf pan or tube pan, line with brown paper and grease
again. Combine flour, baking powder and salt. Mix well with dates and
pecans. Beat eggs and sugar well. Add vanilla and mix well with fruit
mixture. Put in pan and bake in preheated 275degree oven 1 One half hours.
Remove from oven to cooling rack, removing brown paper. When cold, enclose
in plastic wrap and refrigerate.
NOTES : Ms. McCollum has been baking this loaf for 50 years.
