Recipe - Date Bran Muffins

1 One half cup Wheat bran cereal
1 One half cup Skim milk
1/3 cup Margarine; melted
1 Egg
1 teaspoon Vanilla
1 One fourth cup Allpurpose flour
4 One fourth teaspoon Equal "Measure" or
14 Packets Equal sweetener
1 tablespoon Baking powder
One half teaspoon Salt
2 teaspoon Ground cinnamon
One half cup Pitted dates; chopped
Combine cereal and milk in medium bowl; let stand 5 minutes. Stir in
margarine, egg and vanilla. Add combined flour, Equal Measure, baking
powder, salt and cinnamon, stirring just until mixture is blended. Stir in
dates.
Spoon batter into greased muffin tins; bake in preheated 375ø oven until
muffins are browned and toothpicks inserted in centers come out clean,
2025 minutes. Cool in pans on wire rack 5 minutes; remove from pans and
cool on wire racks.
Makes 1 dozen. 18% calorie reduction from traditional recipe. Per muffin:
164 calories, 27 g carbohydrate, 6 g fat, 18 mg cholesterol, 390 mg sodium.
