Recipe - Darling Carrot Cake

4 Eggs
1 One half cup Crisco oil
8 ounce Cream cheese
1 teaspoon Vanilla
2 cup Flour
2 cup Sugar
2 teaspoon Baking powder
2 teaspoon Cinnamon
1 teaspoon Baking soda
One half teaspoon Salt
1 cup Chopped walnuts
3 cup Grated carrots

Here are some carrot recipes i have gathered from the net lately. Enjoy!
From "The Joy of Eating", by Renny Darling. Beat together eggs, oil, cream
cheese and vanilla. Add flour, sugar, baking powder, cinnamon, soda and
salt, and beat until well mixed. Add walnuts and carrots, and mix well.
Pour batter into a greased and floured 9x13inch pan, or into 2 9inch
round pans. Bake at 350 F for about 4045 minutes (for 9x13 pan) or about
3540 minutes (for 9inch round pans). Do toothpick test for doneness.
