Recipe - Dark Chocolate Ganache

2 cup Heavy cream
4 cup Semisweet or bittersweet
chocolate, finely chopped
In a saucepan, heat cream to almost boiling. Remove from the heat. Stir in
chocolate. Continue stirring until spreadable.
Yield: Enough filling for a 6inch, 9inch, and 12inch cake. To fill the
cake for 100 people, use 3 cups of heavy cream and 6 cups of chocolate.
