Recipe - Danish Rum Raisin Muffins

FROM J R'S KITCHEN
1 cup Raisins
1 cup Dark rum
2 cup Flour
One half cup Sugar
1 One half teaspoon Baking powder
One half teaspoon Baking soda
One fourth teaspoon Salt
One fourth teaspoon Nutmeg
Three fourths Stick butter
1 cup Sour cream
1 Egg
Three fourths teaspoon Vanilla
Saok raisins in rum overnight. Drain and reserve rum. Mix dry ingredients
in a large bowl. Cut in butter until coarse meal. Mix in raisins. Whisk
sour cream egg, vanilla and 2 tbs rum until smooth. Make a well in dry
ingredients and pour in wet mixture. Fill muffins tins Three fourths full and bake in
a 375 oven until brown about 20 minutes. makes 18.
