Recipe - Cyndys Gingerbread With Lemon Glaze

Ingredients:

One fourth cup Applesauce
One fourth cup Yogurt or lowfat sourcream
1 Egg
1 cup Molasses
2 One half cup Flour
1 One half teaspoon Baking soda
One half teaspoon Salt
1 teaspoon Cinnamon
1 teaspoon Ginger
1 teaspoon Nutmeg
1 teaspoon Ground cloves
1 cup Hot water

LEMON GLAZE
One half Box powdered sugar
2 Lemons

Blend applesauce and yogurt together. Add sugar and mix thoroughly. Beat in
egg and molasses. Sift flour together with soda, salt, and spices. Add to
molasses mixture alternately with hot water, beginning and ending with
flour. Pour into a greased 9x9 pan and bake at 350 for 45 minutes or until
a toothpick inserted in the middle comes out clean. After removing from
oven, pierce top with the tines of a fork and glaze (recipe follows). I
think this tastes best warm.

Lemon Glaze: In a small bowl, empty One half box powdered sugar. Squeeze juice
of two lemons into the sugar and mix to dissolve. Glaze warm gingerbread.
