Recipe - Cutlets

4 Pork or veal cutlets
Salt
1 tablespoon Flour
1 Egg; beaten
1 One half ounce Dry breadcrumbs
2 ounce Fat
1 tablespoon (heaping) flour
One half pt Water
Beat the cutlets lightly. Salt & dip first in flour, then egg, then in
breadcrumbs. Fry in hot fat until brown. Add flour to fat & brown. Add
water & cook until smooth. Pork cutlets require 1015 minutes cooking time;
veal cutlets require 810 minutes.
