Recipe - Cut (Schnitzel) Beans

1 One half qt String beans
2 tablespoon Bacon, smoked, minced
1 tablespoon Butter
3 Onion, large, cut or sliced up
4 Med Tomato, chopped
1 teaspoon Salt
1 ds Red pepper
1 cup Water, hot
Cut string beans in small pieces. Fry the bacon until crisp and brown, add
the other ingredients and simmer for 1 hour. Add the hot water and continue
cooking 2 hours longer, adding more water if necessary. Source:
