Recipe - Custardy Chicken Bake

6 Chicken breast halves or
thighs
2 tablespoon Vegetable oil
One half teaspoon Salt
One fourth teaspoon Pepper
1 One half cup Bisquick baking mix
1 teaspoon Dried tarragon leaves
One half teaspoon Salt
1 One half cup Milk
3 Eggs
Mushroom Sauce #2; see
recipe
Heat oven to 350 degrees.
Grease baking dish, 13x9x2 inches.
Heat oil in skillet.
Fry chicken until light golden brown.
Place chicken, skin side up, in dish.
Sprinkle with One half Tsp. salt and the pepper.
Beat baking mix, tarragon, One half Tsp. salt, the milk and eggs with hand
beater until smooth.
Pour over chicken. Bake until golden brown, 55 to 60 minutes.
Serve with Mushroom Sauce #2.
Makes 4 to 6 servings.
