Recipe - Curried Potatoes And Peas

3 md Potatoes peeled/ minced
One half teaspoon Salt
1 small Onion minced
1 teaspoon Curry powder
2 tablespoon Margarine
1 tablespoon Flour
One half cup Evaporated milk
Undiluted
1 pack Frozen peas or peas &
Mushrooms or peas and
Carrots
Salt to taste
Parsley

Combine peeled, minced potatoes, water and One half teaspoon salt. Cover and
simmer for 10 minutes. until tender. Drain and reserve liquid. Meanwhile,
in saucepan, saute onion, and curry powder in margarine until tender. Stir
in flour. Blend. Add evaporated milk, part of cooking liquid, peas or pea
mixture and salt to taste. Cook and stir until thick. Add potatoes. Cook to
heat through. Serve garnished with parsley.
