Recipe - Curried Pork With Sweet Potatos

2 lg Sweet potatos
1 pound Pork
1 Onion
2 sl Ginger root
2 tablespoon Sesame oil
1 tablespoon Soy sauce
One half teaspoon Salt, optional
ds Pepper
1 cup Chicken stock
2 tablespoon Curry powder
Oil for stirfry
Peel sweet potatos and cut into One half inch slices. Cut pork in One half inch
cubes. Slice onion thinly. Mince ginger root
Heat oil and deepfry sweet potatos until golden. Drain on paper towels.
Heat remaining oil. Add ginger root and onion and stirfry a few times.
Add pork and brown lightly on all sides.
Stir in soy sauce, salt and pepper. Then add stock and curry powder and
bring to a boil, stirring.
Add deep fried potatos and simmer, covered, until pork is done, about 3040
minutes.
This one is pretty classic; I've seen it almost exactly the same from many
sources, and tasted other peoples' versions that are just like this one
that I use, so go for it. Careful if you're not ready for hot and spicy,
though.
