1 Stick Unsalted Butter
1 lg Onion chopped
2 cup Converted Rice
4 cup Boiling Water
1 teaspoon Curry Powder
One half teaspoon Ground Cumin
1/8 teaspoon Cayenne
1/8 teaspoon Turmeric
1/8 teaspoon Ground Ginger
1/8 teaspoon Pepper
16 ounce Frozen Peas thawed
3 cup Cooked Ham minced
In a large pot, melt butter over mediumhigh heat. Add onion and cook,
stirring, until softened, 3 to 4 minutes. Add rice and cook, stirring,
until rice turns translucent, about 5 minutes. Stir in boiling water, curry
powder, cumin, cayenne, turmeric, ginger, and pepper. Heat to boiling and
reduce heat to low. Cover and simmer 25 minutes, or until all liquid is
absorbed. Stir in peas and ham. Cover and cook over mediumlow heat 5 to
7 minutes, or until peas and ham are hot.
