Recipe - Curried Green Bananas

8 Green bananas
1 cup Coconut milk
2 tablespoon Curry
1 ounce Margarine
1 teaspoon Hot sauce
Salt and pepper to taste
1 Beateb egg
Boiled rice
from: Caribbean cookbook by Rita G. Springer
Fry curry in margarine for 2 minutes. Peel and slice bananas, place in
margarine and curry and brown lightly. Add pepper, salt and coconut milk
and simmer gently for One half hour. Stir in beaten egg. Serve with boiled rice.
