Recipe - Curried Couscous

1 tablespoon Olive oil
1 Shallot finely minced
One fourth cup Green onion finely
Chopped
1 cup Couscous
1 cup Chicken Stock hot
1 teaspoon Soy sauce
2 teaspoon Unsalted butter
1 tablespoon Curry powder
One half teaspoon Sugar
Salt to taste
Freshly ground pepper to
Taste
In a medium size heavy saucepan, heat the olive oil. Add the shallot and
green onion and cook until soft but not browned, about three minutes. Add
the couscous and saute 1 to 2 minutes more. In a separate saucepan, combine
the remaining ingredients and bring to a boil. Pour immediately over the
sauteed couscous, remove from heat and let stand until the liquid has been
absorbed and couscous is tender, 10 to 15 minutes. Serve hot. (if you are
serving to children, leave out curry) You can add cooked chicken, or beef
if you like. Shallots are a small garlic like vegetable. You could use
garlic instead, but it will change the flavor a little.
