Recipe - Curried Couscous-Chicken Salad

2 One fourth cup Water
1 One half teaspoon Salt
1 One half teaspoon Curry powder
2 cup Couscous; uncooked
3 cup Boneless skinless chicken
breast halves; about 1 1/2
pounds
1 One half cup Garbanzo beans; canned,
drained
1 One half cup Red cabbage
Three fourths cup Green onions; cut or sliced up
Three fourths cup Celery; thinly cut or sliced up
1 tablespoon Orange rind; grated
Three fourths teaspoon Pepper
Three fourths cup Orange juice; plus
3/8 cup Orange juice
2 tablespoon Olive oil
Bring water, salt, and curry powder to a boil in a medium saucepan; stir in
couscous. Remove from heat; let stand, covered, 5 minutes. Fluff with a
fork. Add chicken and next 4 ingredients.
Combine orange rind and next 3 ingredients in a bowl; stir with a wire
whisk until blended. Add to couscous mixture; toss well.
