Recipe - Cumin Meatballs

1 cn (16 oz) plum tomatoes
1 Onion; chopped
2 Cloves garlic; minced
1 One fourth teaspoon Ground cumin
Salt & pepper
1 tablespoon Plus 1tsp oil
One fourth teaspoon Red pepper flakes
1 Egg; lightly beaten
1 One half pound Ground beef
1 cup Dry bread crumbs
2 One half tablespoon Milk
1 bn Fresh coriander
Puree tomatoes w/ liquid in food processor. Saute onion, garlic, 1/4tsp
cumin & 1/2tsp salt in 1tbsp oil til onion is soft, 23min. Add tomato
puree and red pepper flakes. Simmer over low heat, partly covered, 30min.
In large bowl, mix egg, beef, bread crumbs, milk, 1/2tsp pepper, 3/4tsp
salt & 1tsp cumin. Shape in 1" balls. Cook meatballs in 1tsp oil til
browned all over, 1015min. Top each meatball w/ a coriander leaf, spear w/
toothpick & serve w/ sauce. makes about 75. Cal: 29 Pro:2g Fat:2g Sod:48g
