Recipe - Cucumber Vinaigrette

One fourth cup Dijon mustard
2 teaspoon Tarragon vinegar
Three fourths cup Corn oil
One fourth cup Chopped green onions
4 Cucumbers; peeled, seeded, &
julienned
Salt & pepper
Mix mustard and vinegar. Whisk in oil slowly. Add onions. Mix sauce and
cucumbers. Chill until ready to serve. Before serving, salt and pepper to
taste.
