Recipe - Cucumber Condiment

1 Medium cucumber, julienned
2 tablespoon White vinegar
1 teaspoon Sugar
1 teaspoon Salt
One half Onion, peeled and cut or sliced up
12 Fresh red chili peppers
slices, paper thin slices
One half cup Dry roasted peanuts, chopped
One fourth teaspoon White pepper, ground
In a deep bowl stir vinegar, sugar, salt and white pepper until well
blended. Add the remaining ingredients, except peanuts, and toss with the
marinade. Top with peanuts right before serving. Serve at once or cover and
chill for no longer than 2 hours before serving.
NOTES : This is a condiment used with many Thai dishes. It is flavorful
cool and refreshing. We have Canadian friends who also add green mango to
this which turns it into a wonderful side salad.
