4 ounce Garbanzo beans, cooked
Lightly chopped
1 Head lettuce cut in 1/4"
Pieces
1 cup Basil leaves chopped
1 cup Mozzarella cheese, part skim
Milk grated
12 ounce Chicken breasts without skin
Poached and cut or sliced up
8 ounce Salami, dry wine
8 ounce Plum tomatoes, minced
Reserve One half garnish
One half cup Provolone cheese grated,
One half Garnish
3 Stalks green onions
Sliced, One half garnish
8 Whole lettuce leaves
Italian Vinaigrette

Combine garbanzo beans, lettuce, basil, mozzarella, chicken, salami, half
the tomatoes, half the provolone and half the green onions. Toss with the
Italian Vinaigrette. Divide evenly between 8 lettucelined plates. Garnish
with the remaining tomatoes, provolone and green onions.
