Recipe - Cuban Pork Roast

3 pound Pork shoulder seasoned
1/3 cup Lime or lemon juice
1 Onion, cut or sliced up
One half teaspoon Oregano
3 Garlic cloves
Season meat with salt and pepper. Pour lime or lemon juice over
roast. Place onion slices over roast. Let stand in refrigerator 12
hours. Split meat in places and add garlic plugs in slashes. Roast
at 325 degrees for 1 One half 2 hours or 3540 minutes per pound.
