Recipe - Cuban Chicken

One fourth cup Oil; vegetable
1 Garlic clove; minced & peel
1 Onion; small purple peeled
One half pack Peas;frozen,thawed;10 oz
1 cn Tomatoes;1 pound peeled,
drained & chopped
3 cup Rice; cooked, cold
1 cup Ham; slivered;opt.
2 cup Chicken;cubed & cooked
One half cup Olives;green;
pimento stuffed
cut or sliced up
1 Avocado;peeled & pitted
Heat wok, add oil, garlic, onion & peas. Stir fry about 23 minutes till
onion is soft. Add tomatoes, rice, ham, chicken and olives. Stir and lift
till heated, place in centre of large platter. Surround with slices of
avocado. Serves 46
