Recipe - Crusty Horseradish Chicken

1 pound Boned and skinned chicken
breast halves
Three fourths cup Breadcrumbs, wholewheat
One fourth teaspoon Salt
One fourth teaspoon Freshly ground pepper
2 tablespoon Prepared horseradish
1 tablespoon Dijon mustard
One fourth cup White wine
Preheat oven to 350 degrees. Cut meat into 4 portions. On a plate mix
together the bread crumbx, salt and pepper. In a bowl stir together the
horseradish, mustard and wine. Dip chicken in the horseradish mixture until
well coated. You can marinade for up to 1 hour for a stronger flavor. Roll
the chicken in the breadcrumbs to coat evenly. Place pieces in a casserole
(not glass). Don't let the pieces touch. Bake uncovered for 2530 mins.
until firm to the touch.
