Recipe - Crustless Crab And Broccoli Quiche

1 cup Broccoli; chopped
One half cup Sweet red peppers; chopped
One fourth cup Onion; chopped
One fourth cup Water
8 ounce Egg Beaters® 99% egg
substitute; thawed
6 ounce Crab meat; drained
One half cup Reduced fat swiss cheese;
shredded
One half cup Skim milk
One half teaspoon Salt
One fourth teaspoon Dry mustard
One fourth teaspoon Ground red pepper
Combine broccoli, red pepper, onion and water in a med. saucepan. Cover and
cook over med. heat 35 minutes or until crisptender. Drain well.
Combine vegetable mixture, egg substitute, and next 6 ingredients in a
large bowl, stirring well. Pour mixture into a 9inch quiche dish coated
with cooking spray. Bake at 350 degrees for 3540 minutes or until set. Let
stand 10 minutes before slicing into wedges.
