One half md Cantaloupe; Cut Into 1/2
Inch Cubes, About 1 1/2
Cups
2 tablespoon Fresh Mint Leaves; Chopped
OR
2 teaspoon Dried Mint Leaves; Crushed
1 teaspoon Grated Lime Peel
3 tablespoon Lime Juice
1 teaspoon Honey
One fourth teaspoon Salt
Mix all of the ingredients in a glass or plastic bowl, tossing to coat.
Cover and refrigerate for about 2 hours or until well chilled.
