Recipe - Crunchy Chicken On Creamy Cheddar Polenta

FOR CHICKEN
2 Chicken breasts
1 ounce Mustard
One half tablespoon Garlic; chopped
One half cup Flour
2 Whole eggs; beaten
1 cup Bread crumbs
Olive oil; for frying
Lemon; for garnish
1 teaspoon Salt
One half teaspoon Pepper
FOR POLENTA
3 ounce Semolina
3 cup Milk
1 One half cup Cheddar cheese; shredded
1 teaspoon Salt
One half teaspoon Pepper
For Chicken:
1. Marinate chicken in mustard and garlic for One half hour. Mix salt and pepper
in the flour.
2. Then coat each piece of chicken in flour, egg, and bread crumbs in that
order. Fry chicken until crispy and golden brown.
For Polenta:
1. Bring milk to a boil over medium high heat. With a whisk, stir in the
semolina until it boils, and reduce heat about 45 minutes. Remove from
the heat and add the cheese, salt, and pepper.
2. Serve polenta immediately placing hot chicken on top.
