Recipe - Crunchy Chicken Nuggets

1/3 cup Plus
2 teaspoon Unsweetened wheat germ
1 teaspoon Paprika
One half teaspoon Coarsely ground black pepper
One fourth teaspoon Salt
15 ounce Skinless boneless chicken
breasts; cut into
bitesizes
2 teaspoon Vegetable oil

In gallonsize sealable plastic bag, combine wheat germ, paprika, pepper
and salt; seal bag and shake to blend. Add 34 chicken pieces; do not crown
bag. Seal bag and shake to coat. Place coated chicken pieces on large
plate; repeat, using remaining chicken pieces.
In large nonstick skillet, heat oil; add coated chicken pieces. Cook,
turning as needed, 1012 minutes, until golden brown on all sides and
cooked through.
EACH SERVING PROVIDES: One half fat; 3 proteins; One half bread
PER SERVING: 180 calories; 28g protein; 5g fat; 6g carbohydrate; 20mg
calcium; 205mg sodium; 62 mg cholesterol; 1 g dietary fiber
