Recipe - Crunchy Apple Rings

One half cup Flour
One half teaspoon Baking powder
One half teaspoon Cinnamon
One fourth teaspoon Salt
1/8 teaspoon Nutmeg
1 Egg; separated
2 tablespoon Sugar
1/3 cup Milk
2 Peeled apples; cored and
cut or sliced up in thin rings
4 cup Corn or Rice Chex; crushed
to 1 Three fourths cups
Confctioners sugar
Workbasket Recipes: Today's recipes are a sort of "mixed Bag". They are
from the October 1979 issue.
Sift together flour, baking powder, salt and spices. Set aside. Beat egg
white until foamy. Add sugar. Beat until stiff but not dry. Set aside. Beat
yolk and milk. Blend in dry ingredients. Fold in whites. Dip apple slice in
batter. Drain thoroughly. Coat with Chex crumbs. Fry about 2 minutes in 1/2
inch hot oil, turning once. Drain on absorbent paper. Dust with
confectioners sugar. Serve immediately. Makes about 20. MAY BE FROZEN: To
thaw, heat unwrapped in 400 oven 10 minutes. Turn once.
