Recipe - Crockpot Minestrone
Categories: None, Crockpot Minestrone
1 One half cup Minced ham or chicken
One half cup Chopped onion
One half cup Diced carrots
One half Box frozen spinach (I use it
all, usually)
1 lg Potato, minced
1 qt Chicken broth (I use canned)
1 cn (16 oz) chick peas
(garbanzos), drained
One half cup Diced celery
1 cn (16 oz) domatoes, chopped
with liquid
1 tablespoon Dry parsley
2 teaspoon Salt
1 tablespoon Oregano
1 cup Macaroni shells, measured
dry
Combine in crock pot and cook all day all except the macaroni. About 45
minutes before serving, add macaroni.
Sprinkle with mozarella cheese before serving.
***This is one of our favorite soups. It's thick, like a stew. You can use
either fresh chicken or cooked chicken. It's better if fresh chicken is
used. I usually chop up a couple of boneless/skinless pieces to use. You
can also mix the chicken and ham if you wish.
