Recipe - Crispy Parmesan Chicken

2 Boned and skinned chicken
breast halves, thawed
1 Egg
3 tablespoon Grated Parmesan cheese
3 tablespoon Finely crushed saltines OR
butter flavored crackers
1 tablespoon Cooking oil
Flatten chicken breasts to 1/4inch thickness with mallet or edge of
sauces. Beat egg in a shallow bowl. Combine Parmesan cheese and cracker
crumbs in another bowl. Dip chicken in egg, then coat with crumb mixture.
Heat oil in skillet; cook chicken for two to three minutes per side or
