Recipe - Crispy Grilled Catfish

4 Whole catfish
One half cup Butter; melted
Three fourths cup Finely crushed cracker
crumbs
1 teaspoon Seasoned salt
One half teaspoon Celery salt
One half teaspoon Garlic salt
Rinse catfish in cold water and pat VERY DRY with paper towels. Mix
together the cracker crumbs and seasonings in shallow bowl. Dip each fish
in melted butter, then roll in seasoned crumbs. Place fish on oiled rack
four inches above hot coals. Cook 8 to 10 minutes per side, turning once
gently. Serve immediately.
