Recipe - Crisp Squash-And-Pepper Toss

One fourth teaspoon Dried whole basil
One fourth teaspoon Dried whole oregano
One fourth teaspoon Dried whole thyme
One half teaspoon Salt
One fourth teaspoon Pepper
1 tablespoon Red wine vinegar
2 tablespoon Water
2 pound Yellow squash; cut into 1/2
inch strips
1 lg Onion; chopped
1 cl Garlic; minced
1 Sweet red pepper; cut into
1/2inch strips
2 tablespoon Olive oil
One fourth pound Kielbasa (Polish sausage)
cut into 1/4inch slices
Combine basil, oregano, thyme, salt, pepper, vinegar, and water in a
shallow 2One half quart casserole dish; add squash. Cover with heavyduty
plastic wrap; microwave at HIGH for 3 to 4 minutes. Let stand, covered,
for 3 to 4 minutes. Add onion, garlic, sweet red pepper, and olive oil;
toss gently. Cover and microwave at HIGH for 2 to 4 minutes. Add sausage,
and toss gently; cover and microwave at HIGH for 1 to 2 minutes.
