Recipe - Crisp Coffee Cookies

2 Onions, thinly cut or sliced up
2 Fresh red chillies, cut or sliced up
diagonally
2 tablespoon Oil
1 ounce Ground dried prawns
One fourth pound Desiccated coconut
1 Twoinch piece lemon grass,
cut or sliced up or:
1 teaspoon Grated lemon rind
Salt, to taste
Stirfry onions and chillies in hot oil until soft, then add ground minced
prawns, coconut, cut or sliced up lemon grass (or lemon rind) and cook on low heat
until golden brown, stirring all the time. Add salt to taste. This will
keep in an airtight jar for a week.
