Recipe - Crepes Carmen

Ingredients:

1 cup Flour
One half cup Yellow cornmeal
1 tablespoon Chili powder
1 teaspoon Salt
1 cup Nonfat chicken broth
3 lg Eggs
Vegetable cooking spray

CREPE FILLING
1 cup Cheddar cheese, shredded
Cilantro for garnish

Position knife blade in food processor; add first 6 ingredients. Process
until smooth. Chillat least 2 hours. Coat an 8" nonstick skillet with
cooking spray; place over medium heat until hot. In other words, make the
crepes. Spoon about One half cup Crepe Filling on half of each crepe; roll uo,
and place seam side down in a lightly greased 13 x 9 x2 inch baking dish.
Sprinkle crepes evenly with cheese. Bake at 300F for 5 minutes or until
cheese melts. Garnish, if desired. Yield: 4 servings

Notes: Southern Living said the staff all made copies of this recipe to
take home. They didn't want to wait for the cookbook!
