Recipe - Creole Potato Hash

3 pound Potatoes; peel, dice, cook
4 Eggs; hardboil, dice
1 small White onion, dice
2 tablespoon Pimientos, dice
2 Ribs celery, dice
4 tablespoon Creole mustard
1 pound Smoked sausage, slice thin
5 mins
1 cup Mayo
One fourth cup Parsley, chopped
2 ds Tabasco
Salt and pepper

Mix all ingredients.
