Recipe - Creole Meuniere Sauce

One fourth cup Red wine
2 Garlic cloves, minced
1 teaspoon Oregano
1 md Onion, minced
1 Green bell pepper, minced
1 Jalapeno pepper, chopped
1 md Tomato, minced
One half pound Whole button mushrooms
1 tablespoon Tomato paste
Simmer the garlic, oregano & onion in the wine for 5 minutes. Add minced
bell pepper & the jalapeno pepper. Cook, stirring frequently, for 2
minutes. Add tomatoes & cook for another 5 minutes. Finally add the
mushrooms & the tomato paste. Cook until the sauce is thickened. Serve
hot.
