Recipe - Creole Cooked Red Beans

2 sl Bacon
1 lg Onion; cut or sliced up ,
Separated into rings
1 md Green pepper; chopped
finely
2 One half cup Chopped fresh tomatoes
1 small Bay leaf
2 cup Corn; cut from cob
One fourth teaspoon Salt
1/8 teaspoon Pepper
Fry bacon until crisp. Remove from skillet, reserving drippings. Drain
bacon & crumble. Add onion & pepper to drippings in skillet. Cook over
medium heat, stirring constantly, until crisptender. Add tomatoes & bay
leaf to onion mixture. Simmer 10 minutes, stirring occasionally. Stir in
corn & simmer 10 minutes. Discar bay leaf. Stir in salt, pepper & bacon.
Yields 68 servings. (Great way to use up extra tomatoes & fresh corn.)
