Recipe - Creamy Cauliflower Au Gratin Soup

1 Envelope Lipton golden onion
Soup mix
3 cup Water
3 cup Cauliflower flowerets
1 Stalk celery coarsely
Chopped
One half cup Light cream or evaporated
Skim milk
Three fourths cup Shredded cheddar cheese
One fourth teaspoon Pepper
In medium saucepan, thoroughly blend golden onion soup mix with water. Add
cauliflowerets and celery. Bring to a boil, then simmer covered, striing
occasionally, 20 minutes or until vegetables are tender. In food processor
or blender, puree hot soup mixture, then return to saucepan. Stir in
remaining ingredients. Simmer, stirring occasionally, 5 minutes or until
cheese is melted.
