Chipped Beef on Toast"
Cooked hominy
The recipe is exactly what you think it is. Cooked hominy is warmed in a
good cream sauce and served over hot toast. I like lots of black pepper on
mine and I serve it over a toasted English muffin. Terrific!
HINT: ON CREAM SAUCE IN THE MICROWAVE. Cream sauce in your microwave is
easy. Use the ingredients for Creamed Chipped Beef on Toast, omitting the
beef. In a 1quart glass mixing bowl, heat the butter at mediumhigh
setting for 1One half minutes. Add the chopped onions and cook for 30 seconds
more at the same temperature setting. Add the flour and mix to form a paste
or roux. Cook at medium for 1 minute. Add the milk and blend thoroughly
with a wire whip. Add the paprika, pepper, and Tabasco. Blend again and
return to microwave for an additional 6 minutes at mediumhigh setting.
Whip once more halfway through the final cooking process. Repeat this if
necessary until the sauce is thickened and hot. Stir in the sherry. Taste
for salt.
