Categories: Penndutch, Salads, Cream Dressing For Cucumbers
1 Cucumber, large
One half cup Sour cream
1 tablespoon Vinegar
Paprika
Salt
Pare cucumber and slice very thin, place in bowl, add salt and place in the
refrigerator. After 2 hours, rinse thoroughly 2 or 3 times in ice cold
water, pressing the cucumber slices between the hands each time to remove
all salt. After the last rinsing, add the following dressing: Combine the
sour cream with the vinegar and paprika; mix well. If desired, chopped
chives or cut or sliced up onions may be added. Source: Pennsylvania Dutch Cook Book
