Recipe - Cream Cheese Pie

1 cup Quaker Oats, uncooked
(quick or oldfashioned)
1/3 cup Finely chopped nuts
One fourth cup Brown sugar, firmly packed
One fourth cup Margarine or butter; melted
16 ounce Cream cheese; softened
One half cup Granulated sugar
1 tablespoon Lemon juice
One half teaspoon Vanilla
2 Eggs
Sliced strawberries
Heat oven to 350 F. Combine oats, nuts, brown sugar and margarine; mix
well. Firmly press onto bottom and sides of 9inch pie plate forming a
1/2inch rim around edge. Bake 10 minutes or until light golden brown;
cool.
In large mixing bowl, combine cream cheese, sugar, lemon juice and
vanilla; beat at medium speed on electric mixer until well blended. Add
eggs, one at a time, mixing well after each. Pour into prepared crust.
Bake 30 minutes; cool on wire rack. Chill several hours before serving.
Garnish with strawberries, if desired.
