Recipe - Crawfish Fritters

1 cup Crawfish tails
One fourth cup Pimientos chopped
One fourth cup Green onions chopped
2 cup Flour
1 teaspoon Baking soda
One half teaspoon Salt
One half teaspoon Liquid crab boil
One half cup Broth or water
Oil for frying
Add pimientos and green onions to crawfish. Sift flour, baking soda and
salt together and add to crawfish. Add broth or water and mix to make a
thick batter. Cover and let rest for One half hour. Heat oil. Drop batter by
spoonsful and fry until golden brown. (wrv)
