Recipe - Cranberry Fruitcake

1 1/3 cup Unbleached flour
One half cup Rolled oats
1 One half teaspoon Baking soda
1 teaspoon Ginger
One half cup Egg whites whipped
One half cup Honey
1/3 cup Orange juice at room
Temperature
One fourth cup Applesauce at room
Temperature
1 teaspoon Vanilla
1 cup Cranberries chopped
Three fourths cup Apples shredded
Preheat oven at 350. Prepare a 9 x 13 pan with cooking spray and flour. In
a mixing bowl, combine flour, oats, baking soda, and ginger. In another
mixing bowl, combine egg whites, honey, orange juice, applesauce, vanilla,
cranberries, and apples. Mix dry ingredients with wet ingredients just
until moistened. Pour batter into prepared pan. Bake for 20 to 25
minutes, or until browned and firm to the touch.
